Gluten Free Lasagna

One of my New Year’s Resolutions was to write more and here I am, January 24th, and I haven’t even published one post. I am a sucky, sucky blogger momma. What can I say, with two kids I could find the time, with three kids, I ALWAYS have something else I need to do.

Today in my free 1 hour and 46 minutes (glorious, heavenly nap time how I love you) I was confronted with the usual; some laundry, lunch clean-up, a messy playroom and dinner prep. I finished it all *insert cheering here* but of course, there was no time to blog.

So now, I am sitting in the family room trying to ignore the screaming, bashing and banging coming from upstairs (bath time is Daddy’s job and therefore, I ignore mostly everything that goes on) and the heaps of laundry waiting to be folded so I can actually write a post about the really yummy gluten free dinner I made tonight.

I  know what you are thinking!

Gluten Free = Gross.

Unless of course you are intolerant to gluten then Gluten Free = Thank God I Can Eat.

I normally fall into the earlier category because I like gluten alot; consequently, I don’t normally cook gluten free unless I am doing so for a gluten intolerant dinner guest. So when I saw a recipe for a gluten free lasagna in my Chatelaine magazine that actually appealed to me, I was a bit surprised. Not only did it look delicious but I had everything for the recipe already in my home and all the ingredients were super budget friendly!

The Yummy GF Lasagna

I made that lasagna tonight and it was really delicious (my husband could not stop eating it) and I thought I had better share it with all of you. Here is the recipe on the Chatelaine site. However, I would recommend a few changes to the recipe. I know we all want to cut down on our sodium, but maybe a touch more salt would be good to bring out some of the other flavours. Also, I don’t like using Italian Seasoning myself because sage always reminds me of a turkey dinner, I prefer a different mixture. I recommend throwing in an extra clove of garlic and going with 1 tsp oregano, 1 tsp basil, 1/8 -1/4 tsp ground cayenne pepper, 1/8 – 1/4 tsp paprika and a touch of fresh ground pepper. Oh and forget the spraying of the baking dish cause cooking sprays are whack; instead just rub a touch of olive oil over the inside of the dish.

    I made this for dinner last night (with your suggested spice alterations) and it was a huge hit!!! I’m a little bit of a clutz in the kitchen so I did manage to burn myself 4 different times during the making (polenta is MEAN!), but in the end we had a delicious meal! Thank you for sharing the recipe Kimberley.
